Spiced Nuts

There is always a need for nibbles at this time of the year

Everybody knows somebody who’s a snack fiend. Make their Christmas with a batch of these. Not that you’ll find them easy to give away…

Ingredients (serves 6-8)

100g cashew nuts

100g macadamia nuts

100g pecan nuts

60g whole almonds ideally with skins on

A handful of pumpkin seedsĀ 

A handful of sunflower seedsĀ 

3tbsp sunflower oil

2tbsp organic honey or maple syrup

1tsp fine sea salt

2 springs of rosemary optional

1-2 tsp ground black pepper

1-2 tsp cayenne pepper

Recipe

  1. Preheat the oven to 170C/325F/gas mark 3. Scatter all the ingredients apart from the pepper and cayenne in a roasting tray and mix until everything is coated well.
  2. Roast for 15minutes, stirring occasionally, until the nuts turn dark brown.
  3. Remove, stir in the pepper and cayenne, and taste. Add salt if you like. If you want to have a little play finish off with different types of flavoured salts e.g seaweed, smoked or truffle.
  4. Leave to cool in the tray, stirring from time to time. Once cool, transfer to an air-tight container.
